These sound great! However, I have some in my family that are sensitive to red 40 and food coloring in general, so I think just adding the extract to the frosting and just a few crushed peppermints would also have the same taste without so much dye. Just a thought for others out there with food coloring sensativities.

You are so right about the food coloring! I used to own a candy/fudge shop and the only food coloring I used was the gel stuff. It's so much easier to cook with for everything, and it's a must for chocolate because chocolate and water don't mix. Regular old food coloring you buy in the grocery store is mostly water. If anyone is serious about making really good cookies and candy, it's worth a visit to a good baking or gourmet shop. I'm sure you can also find it online with a simple search.

Also, I love the Thumbprint cookie! It's so homey and nostalgic! Why? I don't know... it just feels that way. Thanks for sharing!

These sound absolutely Heavenly!!! I want some! I want some! ;)

What a great idea about the food coloring - I'm always frustrated with the dilution of color with store-bought coloring. I never would have thought to buy it from a store like that, though - thank you! :)
