With picnic season upon us, I thought I would share one of my favorite salsa recipes.  I love this recipe because it goes together quickly – not to mention that it tastes great.

This salsa is ready to go in our fridge for the night.  We have a picnic to go to tomorrow and I thought this would be good to take. 

Corn and Black Bean Salsa
1 can corn, drained
1 can black beans, drained
1 small onion, diced
1 small tomato, diced
1 bell pepper, diced
1 Tbsp olive oil
2 Tbsp. apple cider vinegar
2 Tbsp. sugar
salt and pepper to tast

Mix all ingredients. Refrigerate overnight. Best served at room temperature.

    Simple, but delicious. I may even try this on a grilled cheese sandwich. Or, just the next time I have some tortilla chips laying around. Thanks for the great recipe.!
